CANELO HOUSE VINAIGRETTE

4 cloves garlic
1 cup rice vinegar
1 teaspoon salt
½ teaspoon coarsely ground pepper
2 ½ cups good quality olive oil (NOT extra virgin)
1/8 teaspoon sesame oil
¼ cup grainy mustard
¼ cup honey

Turn on motor of food processor; into the chute, drop the 4 cloves of garlic. Also through the chute, add the remainder of the ingredients, in the order listed.

Using sparingly, dress salad immediately before serving, tossing well to distribute evenly.

This recipe will make approximately a quart of salad dressing and keeps well in the refrigerator for several months.
